Ginisang Ampalaya sa Sardinas

  • 2 large ampalaya
  • 1 tablespoon oil from canola
  • 1 onion chopped, peeled and peeled
  • 2 cloves of garlic, chopped and peeled
  • 2 . Large Roma tomatoes cut into pieces
  • 1 teaspoon fish sauce
  • 2 cans (5.5 pounds each) of Sardines in tomato sauce
  • 1 cup of water
  • 1/2 teaspoon sugar
  • Salt and pepper according to your preference


  • Cut ampalaya in length and using the help of a spoon, take out seeds, then scrape off the white pith. Slice thinly and then place in a bowl filled with cold salted water until you need it. Then, when you are ready to use.
  • In a large skillet prepare oil and heat it over medium-high temperature. Add the garlic and onions. cook, stirring frequently until they soften.
  • Add tomatoes, and cook constantly mashing with the side of the spoon until soft and then release the juice.
  • Add the fish sauce, and cook for approximately 1 minute.
  • Add Sardines (including Sauce) along with water. Bring to the point of boiling.
  • Add ampalaya. Gently toss until it is well-mixed. Cook for approximately three to five minutes or until tender but crisp.
  • Sprinkle sugar, pepper and salt to Serve hot.

While it’s easy and straightforward but I’m selective in the brand of sardines I choose to use. I have tried almost all of the sardines available locally from the Philippines and eventually developed an appreciation for a specific brand due to its high quality. I am pleased to learn that my sardines brand is now available across the US. This is why I was able to cook this dish. Don’t let my preference hinder your cooking make use of whatever brand you like.

I can remember eating this dish when I was a child. My friends and I would slice a fresh banana leaf from the vacant lot in the subdivision where we lived within Las Pinas. The place was a very jolly location. Actually, the subdivision is known as Happyville. In the past, I hadn’t ever heard of the term “boodle fight” yet, however, we did it when we tossed an uncooked pot of rice on the banana leaf. We then sprinkle everything sauteed with sardines we cooked over the rice. We ate our meals with our hands, naturally. I’m sure you could imagine what our hands smelled afterwards. The meal was memorable, even though it was basically because it was enjoyed equally among all.

Back then, I haven’t heard of the term “boodle fight” yet, but we were doing it apparently when we scatter a pot of newly cooked rice over the banana leaf and pour all the sauteed sardines over the rice. We ate with our hands, of course. I’m sure that you can imagine what our hands smelled like afterwards. The meal was special though even if it was simply because it was shared equally by everyone.
