Ginisang ampalaya leaf with Tinapa is simple and quick to prepare and inexpensive also. It’s a tasty and satisfying meal that is served made with steamed rice and grilled meat.
- 2 large ampalaya
- 1 tablespoon oil from canola
- 1 onion chopped, peeled and peeled
- 2 cloves of garlic, chopped and peeled
- 2 . Large Roma tomatoes cut into pieces
- 1 teaspoon fish sauce
- 2 cans (5.5 pounds each) of Sardines in tomato sauce
- 1 cup of water
- 1/2 teaspoon sugar
- Salt and pepper according to your preference
- Cut ampalaya in length and using the help of a spoon, take out seeds, then scrape off the white pith. Slice thinly and then place in a bowl filled with cold salted water until you need it. Then, when you are ready to use.
- In a large skillet prepare oil and heat it over medium-high temperature. Add the garlic and onions. cook, stirring frequently until they soften.
- Add tomatoes, and cook constantly mashing with the side of the spoon until soft and then release the juice.
- Add the fish sauce, and cook for approximately 1 minute.
- Add Sardines (including Sauce) along with water. Bring to the point of boiling.
- Add ampalaya. Gently toss until it is well-mixed. Cook for approximately three to five minutes or until tender but crisp.
- Sprinkle sugar, pepper and salt to Serve hot.
While it’s easy and straightforward but I’m selective in the brand of sardines I choose to use. I have tried almost all of the sardines available locally from the Philippines and eventually developed an appreciation for a specific brand due to its high quality. I am pleased to learn that my sardines brand is now available across the US. This is why I was able to cook this dish. Don’t let my preference hinder your cooking make use of whatever brand you like.
