Cooking Tips

  • I love using pork butt to ensure a healthy mixture of fat and meat however feel free to substitute for meat from the loin in case you prefer leaner cuts as well as the pork belly to get plenty of fat.
  • The meat should be cut into uniform sizes to ensure even cooking.
  • Cook the pork at medium-high temperature until it is lightly brown. The extra step of caramelizing the pork adds a lot of flavours.
  • Let the vinegar simmer, unattended with no stirring, for a couple of minutes prior to adding soy sauce to remove the strong acid flavour.

Pork Adobo Pineapple

Ingredients

  • 1 tablespoon oil from canola
  • 3 pounds of pork butt cut into cubes of 1 1/2 inches
  • 1 onion chopped, peeled and peeled
  • 1 head of garlic peeled and minced
  • Salt and pepper as desired
  • 1 cup pineapple juice
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 1/2 cup of water
  • 1 cup pineapple chunks

Instructions

  • In a large pan, on medium-high heat, cook the oil. Add the pork then cook it until brown. Add salt and pepper as desired.
  • Add the garlic and onions to cook, stirring frequently for approximately one to two minutes or so until tender.
  • Add the vinegar and juice of the pineapple. Let it boil, covered and without stirring for three to five minutes.
  • Add the soy sauce and water and bring to the point of boiling.
  • Reduce the heat, cover and cook for 40-50 minutes, or until pork is tender and sauce has reduced.
  • Add pineapple chunks, and cook for an additional 2 to 3 minutes or until cooked through.
  • Sprinkle with salt and pepper according to your preference If you like. Serve hot.

Notes

  • Make a swap with the pork shoulder with pork loin if prefer a slimmer cut and pork belly, if require a thick layer of fat.
  • Cut the meat into uniform sizes to ensure even cooking.
  • Sear the pork over moderate-high until it is lightly brown. This additional process of caramelizing the meat gives it a great flavour.
  • Allow the vinegar to simmer unaffected without stirring for a couple of minutes prior to starting to add the soy sauce to remove the acidic taste.
