Ingredient list

  • TilapiaYou can also cook other meaty fish fillets like cod, Bangus, halibut as well as red snapper. If you prefer to bone in then adjust the cooking time accordingly.
  • Salt and PepperSeason the fish prior to cooking.
  • OilUse an oil with a high smoke point like safflower, canola and corn oils to cook the tilapia correctly with high heat
  • The salted soybeans recipe calls for fermented black beans, also known as the cause (douchi). Be sure to drain the beans to rinse well and drain to eliminate the briny flavour.
  • Chilli garlic sauce– I used Lee Kum Kee brand; swap with Sriracha sauce if unavailable.
  • Soy sauce to give umami flavour

Instructions for stovetops

I like to finish the tilapia fillets with the oven, however, it is possible to cook them through by using the stove and following the steps in the recipe below.

  1. In a large pan prepare the oil with canola, then place the fish in a single layer. Sear for approximately 2 to 1 minute per side, until lightly golden but not fully cooked.
  2. Remove the pan from the stove and pour the water out onto the towelettes. Keep warm.
  3. Clean any excess oil from the pan, and then wipe it clean. Add the water, soy sauce chilli garlic sauce along with black beans. Stir until the beans are evenly distributed. Bring to the point of boiling.
  4. Place fried tilapia in one layer. Spoon sauce over.
  5. Reduce heat, cover and cook until the fish breaks off using a fork.

It should take around 30-minutes to prepare this recipe. The first thing you must do is fry the fish until they become crispy and brown. When the fish is cooked it’s time to saute the vegetables with the fish that you fried and season. The dish is finished within a couple of moments of cooking.

I enjoy tilapia with tausi due to its simplicity and I would eat it as a kid. The only downside to this particular dish is the chance of eating more rice than is normal. This happens only when the food is delicious and tasty.
